This past summer, as the World Cup fever swept across the globe, our Maghrebi community in Lawrence found a unique way to celebrate and immerse ourselves in the spirit of the tournament – by discovering the rich flavors of Algerian cuisine at our local farmers market. It was an incredible experience that brought us closer together as we explored the vibrant stalls that offered a taste of home amidst the cheers and excitement of the World Cup. We savored each bite, relishing the aromas and flavors that transported us to the bustling markets of Algiers.
The Entrée: B’ssara and Chakchouka – A Perfect Pairing
Our culinary adventure began with two beloved Algerian soups – B’ssara and Chakchouka. The former, a hearty chickpea soup seasoned with garlic, cilantro, and chili peppers, was the perfect comfort food to warm our hearts on a chilly summer evening. Its velvety texture and deep flavors reminded us of our grandmother’s cooking, passed down through generations. The latter, Chakchouka, is another popular dish that never fails to impress – a flavorful medley of tomatoes, bell peppers, onions, and spicy merguez sausage simmered until tender. This delightful find at the farmers market transported us straight to the vibrant markets of Algiers, where we could almost hear the sounds of merchants calling out their daily specials.
